Description

Delightful whoopie pies combining the rich flavor of red velvet with mini chocolate chips, filled with a creamy cream cheese frosting.


Ingredients

1 package Red Velvet Cake Mix

1/2 cup Vegetable Oil

2 Eggs

1/2 cup Buttermilk

1 cup Mini Chocolate Chips

8 oz Cream Cheese

1 cup Powdered Sugar

1 tsp Vanilla Extract


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a large bowl, mix together the cake mix, vegetable oil, eggs, and buttermilk until smooth.
  4. Fold in the mini chocolate chips gently.
  5. Scoop rounded mounds of batter onto the prepared baking sheets, spacing them 2 inches apart.
  6. Bake for 12-15 minutes until edges are set and tops spring back.
  7. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  8. In a medium bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  9. Pair up cooled cookies and spread cream cheese filling on one side, topping with another cookie.
  10. Serve and enjoy!

Notes

For a vegan version, substitute eggs with flaxseed meal and the cream cheese with Greek yogurt.
