1 package Red Velvet Cake Mix
1/2 cup Vegetable Oil
2 Eggs
1/2 cup Buttermilk
1 cup Mini Chocolate Chips
8 oz Cream Cheese
1 cup Powdered Sugar
1 tsp Vanilla Extract
Instructions
- Preheat the oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- In a large bowl, mix together the cake mix, vegetable oil, eggs, and buttermilk until smooth.
- Fold in the mini chocolate chips gently.
- Scoop rounded mounds of batter onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-15 minutes until edges are set and tops spring back.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
- In a medium bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
- Pair up cooled cookies and spread cream cheese filling on one side, topping with another cookie.
- Serve and enjoy!
Notes
For a vegan version, substitute eggs with flaxseed meal and the cream cheese with Greek yogurt.
