Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3–4 jalapeños, diced (seeds optional)
- 4 cups chicken or vegetable broth
- 8 ounces cream cheese
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup corn
- 1/4 cup cilantro, chopped
- Salt and pepper, to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for 5-7 minutes until soft.
- Add minced garlic and cook for an additional minute.
- Dice jalapeños and add to the pot; sauté for 3-4 minutes.
- Pour in chicken or vegetable broth; bring to a boil then reduce heat and simmer for 10 minutes.
- Add cream cheese and stir until incorporated; gradually pour in heavy cream.
- Stir in cheddar cheese and corn; heat for about 5 minutes until melted.
- Stir in cilantro and adjust seasoning with salt and pepper.
- Prepare grilled cheese dippers and serve alongside the soup.
Notes
Serve with extra cheese, jalapeño slices, or a dollop of sour cream for added flavor.
