Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 34 jalapeños, diced (seeds optional)
  • 4 cups chicken or vegetable broth
  • 8 ounces cream cheese
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup corn
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for 5-7 minutes until soft.
  2. Add minced garlic and cook for an additional minute.
  3. Dice jalapeños and add to the pot; sauté for 3-4 minutes.
  4. Pour in chicken or vegetable broth; bring to a boil then reduce heat and simmer for 10 minutes.
  5. Add cream cheese and stir until incorporated; gradually pour in heavy cream.
  6. Stir in cheddar cheese and corn; heat for about 5 minutes until melted.
  7. Stir in cilantro and adjust seasoning with salt and pepper.
  8. Prepare grilled cheese dippers and serve alongside the soup.
