Instructions

  • Brown your butter and sugar together until light and fluffy, using a stand mixer or hand mixer on medium speed for 2–3 minutes.
  • Beat in the egg, molasses, and vanilla until the mixture is glossy and smooth.
  • Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  • Fold dry ingredients into the wet mixture just until cohesive. If the dough seems sticky, refrigerate for 10–15 minutes.
  • Wrap the dough in plastic and chill for 30 minutes.
  • Roll the dough to about 1/4 inch (6 mm) thickness on a lightly floured surface. Cut with cookie cutters and re-roll scraps as needed; space cookies 1 inch apart on parchment-lined baking sheets.
  • Bake at 350°F (175°C) for 9–11 minutes, until edges just begin to brown and centers stay soft. Cool on the baking sheet for 2–3 minutes before transferring to a wire rack.
  • Prepare maple glaze: whisk powdered sugar with maple syrup and melted butter until smooth; adjust thickness with more sugar or a splash of milk.
  • Once cookies are completely cooled, drizzle or brush the glaze over the tops and let it set at room temperature for 15–20 minutes.
