Description

An eye-catching appetizer featuring sweet roasted beets and creamy goat cheese, perfect for impressing guests.


Ingredients

2 large Fresh Beets

8 oz. Goat Cheese

1 cup Walnuts, chopped

1/4 cup Fresh Herbs, mixed (such as dill and parsley)

2 tbsp Honey

1/2 tsp Salt

Pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C). Clean the beets, wrap them in aluminum foil, and place them on a baking sheet. Roast for 45-60 minutes until tender.
  2. In a medium bowl, combine the goat cheese, honey, fresh herbs, and season with salt and pepper. Mix until smooth.
  3. Add the chopped roasted beets and toasted walnuts to the goat cheese mixture, gently folding to keep the beets intact.
  4. On plastic wrap, spoon the beet and goat cheese mixture into a log shape, rolling tightly and securing the ends. Refrigerate for at least 1 hour.
  5. Remove the log from the wrap and serve on a platter, pairing with toasted baguette slices or crackers.

Notes

For a dairy-free version, try vegan cream cheese. Ensure beets are tender before removing from the oven.
