2 large Fresh Beets
8 oz. Goat Cheese
1 cup Walnuts, chopped
1/4 cup Fresh Herbs, mixed (such as dill and parsley)
2 tbsp Honey
1/2 tsp Salt
Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Clean the beets, wrap them in aluminum foil, and place them on a baking sheet. Roast for 45-60 minutes until tender.
- In a medium bowl, combine the goat cheese, honey, fresh herbs, and season with salt and pepper. Mix until smooth.
- Add the chopped roasted beets and toasted walnuts to the goat cheese mixture, gently folding to keep the beets intact.
- On plastic wrap, spoon the beet and goat cheese mixture into a log shape, rolling tightly and securing the ends. Refrigerate for at least 1 hour.
- Remove the log from the wrap and serve on a platter, pairing with toasted baguette slices or crackers.
Notes
For a dairy-free version, try vegan cream cheese. Ensure beets are tender before removing from the oven.
