Ingredients

  • 2 cups Fresh Carrots, grated
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic, minced

Instructions

  1. Wash the carrots thoroughly and optionally peel them. Grate the carrots using a grater or food processor.
  2. In a small bowl, combine lemon juice, olive oil, minced garlic, salt, and pepper, and whisk until blended.
  3. In a mixing bowl, add grated carrots and pour the dressing over them. Toss to coat the carrots.
  4. Chop the fresh herbs and sprinkle them onto the salad, tossing gently to combine.
  5. Adjust seasoning to taste and add chili flakes if desired.
