Description

A healthy twist on a nostalgic treat, these Raspberry Protein Pop Tarts are packed with protein and fiber, making them a delicious guilt-free dessert.


Ingredients

1 cup Whole Wheat Flour

1 scoop Protein Powder

1 cup Raspberries (fresh or frozen)

2 tablespoons Honey or Maple Syrup

1/2 cup Unsweetened Applesauce

2 Eggs (or flax egg for vegan option)

1 teaspoon Baking Powder

1/2 teaspoon Cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the whole wheat flour, protein powder, baking powder, and cinnamon.
  3. In a separate bowl, whisk together the applesauce, eggs, honey (or maple syrup), and vanilla extract until well combined.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until just combined.
  5. Gently fold in the raspberries into the batter.
  6. On a well-floured surface, roll out the dough to about 1/4 inch thickness and cut into rectangles.
  7. Place a teaspoon of raspberry jam on half of the rectangles, cover with the remaining rectangles, and press the edges to seal.
  8. Transfer to a parchment-lined baking sheet and bake for 15-20 minutes or until golden brown.

Notes

For a gluten-free option, substitute almond flour or a gluten-free blend. Experiment with different fruits or sweeteners to customize your Pop Tarts.
