Description

Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick dinner or appetizer.


Ingredients

  • 4 whole wheat tortillas
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 small red onion, chopped
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped red onion until translucent (about 3 minutes).
  2. Add fresh spinach and stir for 2-3 minutes until wilted.
  3. In a bowl, combine sautéed onions, spinach, feta, mozzarella, and black pepper.
  4. Assemble quesadillas by placing filling on one half of a tortilla and folding it over.
  5. Cook in a skillet over medium heat for 2-3 minutes on each side until golden brown and cheese is melted.
  6. Slice and serve warm with yogurt or tzatziki sauce.

Notes

Avoid overstuffing quesadillas for easy flipping. Use room temperature ingredients for even cooking.
