- 4 whole wheat tortillas
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 small red onion, chopped
- 1 tablespoon olive oil
- Black pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat. Sauté chopped red onion until translucent (about 3 minutes).
- Add fresh spinach and stir for 2-3 minutes until wilted.
- In a bowl, combine sautéed onions, spinach, feta, mozzarella, and black pepper.
- Assemble quesadillas by placing filling on one half of a tortilla and folding it over.
- Cook in a skillet over medium heat for 2-3 minutes on each side until golden brown and cheese is melted.
- Slice and serve warm with yogurt or tzatziki sauce.
Notes
Avoid overstuffing quesadillas for easy flipping. Use room temperature ingredients for even cooking.
