1 cup diced tomatoes

2 cups fresh spinach

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Add the diced red onion and minced garlic, cooking until fragrant and translucent, about 3-5 minutes.
