Description

A delightful treat combining doughy, buttery popcorn with gooey marshmallows and rich caramel, perfect for sweet snacks.


Ingredients

  • 1 cup Popcorn Kernels
  • 1/2 cup Unsalted Butter (or Coconut Oil)
  • 10 oz Mini Marshmallows
  • 1 cup Brown Sugar
  • 1/2 cup Light Corn Syrup (or Agave Syrup)
  • 1 tsp Vanilla Extract (or Almond Extract)
  • 1/2 tsp Salt

Instructions

  1. Pop the popcorn kernels until you have about 10 cups of popped corn.
  2. In a medium saucepan, combine the butter, brown sugar, corn syrup, and salt over medium heat, stirring until it boils. Let it boil for 4-5 minutes until it reaches a light amber color.
  3. Remove the caramel from heat and stir in the mini marshmallows until melted and smooth.
  4. Add vanilla extract to the caramel mixture and stir until well combined.
  5. Pour the caramel-marshmallow mixture over the popped corn in a large mixing bowl, gently folding until every kernel is coated.
  6. Spread the coated popcorn onto a lined baking sheet to cool for 15-20 minutes, then break into pieces and serve.

Notes

Store leftovers in an airtight container for up to a week. Ensure popcorn cools completely before sealing.
