Ingredients

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
1 cup sour cream
3 large eggs
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
A pinch of salt
Topping: 1/4 cup sliced almonds
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with butter or line it with parchment paper.
- In a large mixing bowl, combine flour, baking powder, baking soda, and salt. Whisk until well blended.
- In another bowl, beat butter and sugar together until light and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
- Blend in sour cream until smooth.
- Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Top the batter with sliced almonds and press them lightly into the batter.
- Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a lighter version, consider using whole wheat flour or replacing granulated sugar with coconut sugar.
