Description

Delightful cookies inspired by the London Fog tea, featuring Earl Grey tea, vanilla, and lavender for a sophisticated twist.


Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar

2 tablespoons Earl Grey tea leaves

1/2 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

1 tablespoon lavender buds

1/2 teaspoon baking soda

1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together unsalted butter and both types of sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a small bowl, combine Earl Grey tea leaves and lavender buds.
  5. In another bowl, whisk together all-purpose flour, baking soda, and salt; gradually mix this into the wet ingredients.
  6. Fold in the tea and lavender mixture gently.
  7. Scoop tablespoon-sized dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For a vegan option, use a flaxseed egg and coconut oil instead of butter.
