2 cups Leftover Mashed Potatoes

1 cup Shredded Cheese (Cheddar, Mozzarella, Pepper Jack, or Goat Cheese)

1/2 cup All-Purpose Flour

2 Eggs

1/4 cup Green Onions, finely chopped

1 tsp Salt

1/2 tsp Pepper

1 tsp Garlic Powder

1 cup Breadcrumbs (Panko recommended)


Instructions

  1. In a large bowl, combine your leftover mashed potatoes, shredded cheese, and chopped green onions. Mix thoroughly until well blended.
  2. Crack in the eggs and mix again. Sprinkle in the all-purpose flour, garlic powder, salt, and pepper. Combine until the mixture is cohesive yet slightly sticky.
  3. Scoop out a small handful of the potato mixture and shape it into a ball or small patty. Repeat until all the mixture is formed.
  4. Roll each ball or patty in breadcrumbs until evenly coated.
  5. For frying: Heat oil in a skillet over medium heat. Cook puffs for about 3-4 minutes on each side until golden brown. For baking: Preheat the oven to 400°F (200°C), place puffs on a parchment-lined baking sheet, spray with cooking oil, and bake for 20-25 minutes or until crispy and golden.
