Description
A traditional Sicilian dessert filled with creamy ricotta, candied fruits, and a rich sponge cake, perfect for holiday celebrations.
Ingredients
- Sponge Cake: 1 pre-made or homemade
- Ricotta Cheese: 2 cups, whole milk
- Candied Fruits: 1 cup, mixed
- Almond Paste: 1/2 cup
- Sugar: 3/4 cup
- Vanilla Extract: 1 tsp
- Orange Zest: 1 tbsp
- Powdered Sugar: 1 cup
Instructions
- Preheat oven to 350°F (175°C). Prepare cake pan by greasing and flouring it.
- In a bowl, beat eggs and sugar until frothy, fold in flour, pour into pan, and bake for 30-35 minutes. Allow to cool completely.
- Combine ricotta, candied fruits, almond paste, vanilla, and orange zest in a bowl. Mix until smooth.
- Slice the cooled sponge cake in half horizontally. Spread half of the filling on the first layer.
- Top with the second layer, then spread the remaining filling on top.
- For the glaze, mix powdered sugar with water in a saucepan; gently simmer until smooth.
- Pour the glaze over the cake and allow to cool in the refrigerator for at least one hour before serving.
- Garnish with additional candied fruits or almonds if desired, then slice and serve.
Notes
Chilling time is important for setting the cake. Consider personalizing with fruits or nuts.
