1 cup water (filtered)
1 tablespoon lemon juice
1 cup cornstarch
1 cup dried cranberries
1 tablespoon rosewater
1/4 teaspoon salt

Instructions
- Prepare your ingredients by measuring accurately and sifting the cornstarch.
- In a medium saucepan, combine granulated sugar, water, and lemon juice. Heat until sugar dissolves and bring to a boil, then reduce to low heat.
- Simmer until mixture reaches 240°F (soft-ball stage), stirring occasionally.
- In a separate bowl, create a slurry with cornstarch and a little water. Whisk it into the syrup on low heat.
- Continue stirring until thickened to a gelatinous consistency (20-30 minutes).
- Remove from heat and stir in rosewater, salt, and cranberries.
- Pour the mixture into a greased mold lined with parchment paper. Let it sit for at least 4 hours or overnight.
- Once set, dust a cutting board with cornstarch, turn out the Turkish delight, and cut into squares, rolling in more cornstarch to prevent sticking.
Notes
Use high-quality rosewater for the best flavor. Consider experimenting with different flavor extracts or dried fruits.
