Instructions

  • Line a baking sheet with parchment paper or a silicone mat. Have all ingredients measured and ready. Keep everything within arm’s reach to minimize handling time and help the yogurt clusters set.
  • In a medium bowl, combine the Greek yogurt, finely chopped strawberries, honey or maple syrup if using, vanilla extract, and a pinch of salt. Stir until well integrated and the fruit is dispersed. The strawberries release moisture as they sit, so aim for a slightly thicker blend that will hold its shape when scooped.
  • Scoop small mounds onto the prepared sheet, spacing them about 1 inch apart. If you prefer more defined shapes, roll each scoop gently between your palms to form compact balls.
  • Freeze the clusters to set the yogurt. Place the tray in the freezer for about 60 minutes. Longer chilling yields sturdier clusters; rotate the tray halfway through to ensure even freezing.
  • Melt the dark chocolate with the coconut oil using a double boiler or microwave in short bursts, until glossy and smooth. Let the mixture cool slightly so it coats without seizing the yogurt clusters.
  • Dip each frozen cluster into the melted chocolate, or drizzle generously. Return to the parchment-lined sheet. For a thicker shell, dip a second time after the first coating sets. Add optional toppings while the chocolate is tacky.
  • Chill again in the fridge or freezer for 10–15 minutes to allow the chocolate to set completely. Store in a cool environment if your kitchen runs warm.
