Ingredients
4 medium-sized starchy potatoes (e.g., Russets or Maris Piper)
1 cup all-purpose flour (or gluten-free flour)
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons butter, melted (or coconut oil/olive oil for dairy-free)
1/4 cup milk (or plant-based milk)
Instructions
- Boil the potatoes: Peel and dice them, then cook in salted water until tender, about 15-20 minutes.
- Mash the potatoes: Drain and mash until smooth, letting them cool slightly.
- Prepare the dough: In a bowl, mix mashed potatoes, flour, baking powder, salt, and melted butter until soft dough forms.
- Roll out the dough: On a floured surface, roll to about 1/2 inch thick and cut into round flatbreads.
- Cook the flatbreads: Heat a skillet over medium heat and cook each for 3-4 minutes on each side until golden brown.
- Serve warm: Brush with melted butter and enjoy with toppings.
