Instructions

  • Preheat your oven to 350°F (175°C). Place the raw crust in a 9-inch pie pan and crimp the edges. If you prefer blind baking, line the crust with parchment and fill with weighted beans or pie weights. Bake for 10 minutes until the edges just begin to set. Remove weights and parchment, then return to oven for 5 minutes to lightly set.
  • In a small saucepan, combine the milk and heavy cream. Heat until tiny bubbles form around the edge and the mixture is hot but not boiling. This tempering helps create a smooth custard. If you want to add citrus aroma, infuse with a strip of lemon zest for 10 minutes, then strain.
  • In a large bowl, whisk the eggs, sugar, and salt until pale and slightly thickened. Avoid overbeating after the dairy is added to prevent too many air bubbles.
  • Slowly drizzle about a quarter of the hot dairy into the egg mixture while whisking continuously to temper. Then whisk in the remaining dairy. Stir in vanilla and nutmeg.
  • Pour the custard through a fine-mesh sieve into the prepared crust. Straining removes coagulated bits and helps ensure a silkier texture.
  • Place the pie pan in a larger baking dish and pour hot water into the outer dish halfway up the sides. Bake 60–70 minutes, until the center jiggles slightly when the pan is gently rocked.
  • Remove the pie from the water bath and cool on a rack for about 30 minutes. Refrigerate for at least 2 hours, ideally 4, to allow the filling to firm up fully.
  • Dust the top with nutmeg and optionally decorate with whipped cream. Slice with a warm knife for neat portions.
