Description

A delicious dish combining zesty lemon, rich butter, and crunchy zucchini that promises to invigorate your dinner table.


Ingredients

4 pieces Chicken Breasts

4 tablespoons Unsalted Butter

1 cup Heavy Cream

1/4 cup Lemon Juice

3 cloves Garlic, minced

2 medium-sized Zucchini

1/4 cup Parsley, chopped

Salt and Pepper, to taste


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat, and sear the chicken for 6-7 minutes on each side until golden brown. Transfer to a plate.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Add remaining butter, heavy cream, and lemon juice to the skillet. Stir for about 3-4 minutes until the sauce thickens slightly.
  5. Return the chicken to the skillet and let it simmer for about 5 minutes, ensuring it’s well-coated with the sauce.
  6. Slice the zucchini into half-moons. Sauté in a separate pan with a little oil over high heat for about 5 minutes until just tender. Season with salt and pepper.
  7. Serve the chicken plated with drizzled sauce over it and the crispy zucchini on the side, garnishing with fresh parsley.

Notes

For a lighter option, consider substituting chicken breasts with chicken thighs or using olive oil instead of butter.
