4 pieces Chicken Breasts
4 tablespoons Unsalted Butter
1 cup Heavy Cream
1/4 cup Lemon Juice
3 cloves Garlic, minced
2 medium-sized Zucchini
1/4 cup Parsley, chopped
Salt and Pepper, to taste
Instructions
- Season the chicken breasts with salt and pepper.
- Melt 2 tablespoons of butter in a large skillet over medium heat, and sear the chicken for 6-7 minutes on each side until golden brown. Transfer to a plate.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Add remaining butter, heavy cream, and lemon juice to the skillet. Stir for about 3-4 minutes until the sauce thickens slightly.
- Return the chicken to the skillet and let it simmer for about 5 minutes, ensuring it’s well-coated with the sauce.
- Slice the zucchini into half-moons. Sauté in a separate pan with a little oil over high heat for about 5 minutes until just tender. Season with salt and pepper.
- Serve the chicken plated with drizzled sauce over it and the crispy zucchini on the side, garnishing with fresh parsley.
Notes
For a lighter option, consider substituting chicken breasts with chicken thighs or using olive oil instead of butter.
