Ingredients
2 cups all-purpose flour
1 cup fresh or frozen cranberries
3/4 cup granulated sugar
1/2 cup orange juice
1 tablespoon orange zest
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 large egg
2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with cooking spray or butter.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
- In another large bowl, combine the orange juice, egg, vegetable oil, orange zest, and vanilla extract. Beat lightly until mixed.
- Slowly add the dry ingredients to the wet mixture and stir gently until just combined.
- Gently fold in the cranberries.
- Pour the batter into the prepared loaf pan and bake for about 60 minutes.
- Let the bread cool in the pan for about 10 minutes, then remove it and cool completely on a wire rack.
- In a small bowl, whisk together the powdered sugar and milk until smooth to make the glaze.
- Once the bread is cool, drizzle the orange glaze over the top and let it set before slicing.
Notes
