Ingredients

1 cup fresh or frozen cranberries

3/4 cup granulated sugar

1/2 cup orange juice

1 tablespoon orange zest

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/3 cup vegetable oil

1 large egg

2 cups powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with cooking spray or butter.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
  4. In another large bowl, combine the orange juice, egg, vegetable oil, orange zest, and vanilla extract. Beat lightly until mixed.
  5. Slowly add the dry ingredients to the wet mixture and stir gently until just combined.
  6. Gently fold in the cranberries.
  7. Pour the batter into the prepared loaf pan and bake for about 60 minutes.
  8. Let the bread cool in the pan for about 10 minutes, then remove it and cool completely on a wire rack.
  9. In a small bowl, whisk together the powdered sugar and milk until smooth to make the glaze.
  10. Once the bread is cool, drizzle the orange glaze over the top and let it set before slicing.
