Ingredients

1 ½ cups all-purpose flour

8 oz cream cheese, softened

¾ cup granulated sugar

¼ cup brown sugar

2 tbsp instant coffee

½ cup unsalted butter, softened

1 large egg

1 cup chocolate chips (optional)

1 tsp baking powder


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the cream cheese and mix until well combined.
  4. Beat in the egg and instant coffee.
  5. In a separate bowl, whisk together the flour and baking powder, then gradually add to the wet ingredients.
  6. Fold in the chocolate chips if using.
  7. Scoop dollops of dough onto a lined baking sheet.
  8. Bake for 10-12 minutes until edges are slightly golden.
  9. Cool on the baking sheet before transferring to a wire rack.

Notes

For a healthier option, swap all-purpose flour for whole wheat and use Greek yogurt instead of cream cheese.
