Ingredients

1 cup all-purpose flour

3/4 cup granulated sugar

3 large eggs

1 tablespoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1 cup heavy whipping cream


Instructions

  1. Preheat the Oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, combine the eggs and granulated sugar, and beat until frothy and pale (about 5 minutes).
  3. Add the vanilla extract to the egg mixture and gently fold in the dry ingredients.
  4. Pour the batter into the prepared baking sheet, spreading it evenly. Bake for 12-15 minutes until lightly golden.
  5. Once baked, immediately turn the cake onto a clean, powdered sugar-dusted kitchen towel and roll it tightly. Let it cool completely in the towel.
  6. Whip the heavy cream in a chilled bowl until soft peaks form.
  7. Unroll the cooled cake, spread whipped cream evenly, and roll it back up without the towel.
  8. Wrap the rolled cake in plastic wrap and refrigerate for at least 30 minutes to set.
  9. Slice the roll cake with a serrated knife and dust with powdered sugar before serving.

Notes

Avoid rushing the cooling step to prevent cracking when rolling. Store leftovers wrapped in plastic for up to three days.
