1 cup heavy whipping cream
Instructions
- Preheat the Oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, combine the eggs and granulated sugar, and beat until frothy and pale (about 5 minutes).
- Add the vanilla extract to the egg mixture and gently fold in the dry ingredients.
- Pour the batter into the prepared baking sheet, spreading it evenly. Bake for 12-15 minutes until lightly golden.
- Once baked, immediately turn the cake onto a clean, powdered sugar-dusted kitchen towel and roll it tightly. Let it cool completely in the towel.
- Whip the heavy cream in a chilled bowl until soft peaks form.
- Unroll the cooled cake, spread whipped cream evenly, and roll it back up without the towel.
- Wrap the rolled cake in plastic wrap and refrigerate for at least 30 minutes to set.
- Slice the roll cake with a serrated knife and dust with powdered sugar before serving.
Notes
Avoid rushing the cooling step to prevent cracking when rolling. Store leftovers wrapped in plastic for up to three days.
