Description

These Christmas Cranberry Bars are a delightful blend of sweet and tart flavors, perfect for the festive season. Easy to make and sure to please everyone.


Ingredients

  • 2 cups Fresh or Dried Cranberries
  • 1 and ¾ cups Unbleached All-Purpose Flour
  • 1 cup Old-Fashioned Rolled Oats
  • ½ cup Unsalted Butter, melted
  • ¾ cup Granulated Sugar
  • ½ cup Brown Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • ½ tsp Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking dish with parchment paper.
  3. In a large bowl, whisk together the flour, oats, baking powder, and salt.
  4. In a separate bowl, mix the melted butter, both sugars, egg, and vanilla extract until creamy.
  5. Gradually add the wet ingredients to the dry mix.
  6. Gently fold in your cranberries.
  7. Transfer the mixture to the prepared baking dish and bake for 25-30 minutes.
  8. Allow to cool in the dish for 10 minutes, then cool completely on a wire rack before slicing into bars.

Notes

For a gluten-free version, use gluten-free oats. You can also substitute coconut oil for butter and flaxseed meal for the egg.
