- 2 cups Fresh or Dried Cranberries
- 1 and ¾ cups Unbleached All-Purpose Flour
- 1 cup Old-Fashioned Rolled Oats
- ½ cup Unsalted Butter, melted
- ¾ cup Granulated Sugar
- ½ cup Brown Sugar
- 1 large Egg
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- ½ tsp Salt
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking dish with parchment paper.
- In a large bowl, whisk together the flour, oats, baking powder, and salt.
- In a separate bowl, mix the melted butter, both sugars, egg, and vanilla extract until creamy.
- Gradually add the wet ingredients to the dry mix.
- Gently fold in your cranberries.
- Transfer the mixture to the prepared baking dish and bake for 25-30 minutes.
- Allow to cool in the dish for 10 minutes, then cool completely on a wire rack before slicing into bars.
Notes
For a gluten-free version, use gluten-free oats. You can also substitute coconut oil for butter and flaxseed meal for the egg.
