Description

A delightful blend of tartness and sweetness, these Christmas Cranberry Bars are the perfect holiday treat that brings joy and nostalgia to festive gatherings.


Ingredients

2 cups fresh cranberries (or frozen)

1 cup granulated sugar (or coconut sugar)

1/2 cup brown sugar (light or dark)

1/2 cup unsalted butter (or coconut oil)

2 large eggs (or mashed bananas/flaxseed eggs)

1 1/2 cups all-purpose flour (or whole wheat flour)

1 tsp baking powder (or baking soda)

1 tsp vanilla extract

1/2 tsp salt (sea salt recommended)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. If using fresh cranberries, rinse and discard any damaged ones. Toss with a tablespoon of sugar if desired.
  4. In a large mixing bowl, cream the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  7. Fold in the cranberries gently.
  8. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool for 10 minutes before transferring to a wire rack to cool completely. Slice into bars.

Notes

Feel free to dust with powdered sugar or serve with whipped cream for an indulgent treat! To enhance flavor, add a pinch of cinnamon or nutmeg if desired.
