Ingredients
2 cups fresh cranberries (or frozen)
1 cup granulated sugar (or coconut sugar)
1/2 cup brown sugar (light or dark)
1/2 cup unsalted butter (or coconut oil)
2 large eggs (or mashed bananas/flaxseed eggs)
1 1/2 cups all-purpose flour (or whole wheat flour)
1 tsp baking powder (or baking soda)
1 tsp vanilla extract
1/2 tsp salt (sea salt recommended)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- If using fresh cranberries, rinse and discard any damaged ones. Toss with a tablespoon of sugar if desired.
- In a large mixing bowl, cream the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
- Fold in the cranberries gently.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes before transferring to a wire rack to cool completely. Slice into bars.
Notes
Feel free to dust with powdered sugar or serve with whipped cream for an indulgent treat! To enhance flavor, add a pinch of cinnamon or nutmeg if desired.
