A delectable fusion of Mexican flavors in a savory sandwich, perfect for weeknight dinners or impressing guests.


Ingredients

1 lb Chicken Breast

4 Bolillo Rolls

1 cup Refried Beans

1 Avocado, sliced

1 cup Queso Fresco, crumbled

1/2 cup Pickled Jalapeños

1 Tomato, sliced

1/4 cup Cilantro, chopped

1 Lime, juiced


Instructions

  1. Marinate the chicken in lime juice, garlic, cumin, salt, and pepper for at least 15 minutes.
  2. Cook the marinated chicken in a grill pan over medium-high heat for about 7-8 minutes on each side, until fully cooked.
  3. Toast the bolillo rolls until golden and crispy.
  4. Spread refried beans on the bottom half of each roll, then layer with sliced chicken, avocado, queso fresco, pickled jalapeños, fresh tomatoes, and cilantro. Squeeze lime juice over the top.
  5. Place the top half of the bolillo rolls on and serve immediately.

Notes
