1 lb Chicken Breast
4 Bolillo Rolls
1 cup Refried Beans
1 Avocado, sliced
1 cup Queso Fresco, crumbled
1/2 cup Pickled Jalapeños
1 Tomato, sliced
1/4 cup Cilantro, chopped
1 Lime, juiced
Instructions
- Marinate the chicken in lime juice, garlic, cumin, salt, and pepper for at least 15 minutes.
- Cook the marinated chicken in a grill pan over medium-high heat for about 7-8 minutes on each side, until fully cooked.
- Toast the bolillo rolls until golden and crispy.
- Spread refried beans on the bottom half of each roll, then layer with sliced chicken, avocado, queso fresco, pickled jalapeños, fresh tomatoes, and cilantro. Squeeze lime juice over the top.
- Place the top half of the bolillo rolls on and serve immediately.
Notes
Serve with a side of salad or tortilla chips for a complete meal. Customize with additional toppings as desired.
