Description

Delicious rolls filled with mixed vegetables and gooey cheese, encased in a crunchy puff pastry. A fun way to enjoy more veggies!


Ingredients

  • Mixed Vegetables (2 cups)
  • Cream Cheese (8 oz)
  • Shredded Mozzarella Cheese (1 cup)
  • Puff Pastry Sheets (2 sheets)
  • Garlic Powder (1 tsp)
  • Salt and Pepper (to taste)
  • Egg (1, beaten)
  • Parmesan Cheese (optional, ¼ cup)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop your chosen vegetables into small bite-sized pieces.
  3. In a bowl, combine cream cheese, shredded mozzarella, garlic powder, and the vegetables. Season with salt and pepper.
  4. Lightly flour your workspace and roll out the puff pastry sheets.
  5. Cut the pastry into squares, approximately 4×4 inches.
  6. Place a tablespoon of filling in the center of each square and fold the pastry over to create a triangle or rectangle.
  7. Brush the tops with the beaten egg and sprinkle with Parmesan cheese if using.
  8. Bake in the preheated oven for 20-25 minutes, or until golden.
  9. Allow to cool for a few minutes before serving.

For a healthier option, consider using whole grain puff pastry and reduced-fat cheese.
