Ingredients

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon fresh thyme, chopped
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Gather ingredients and slice the onions.
  2. Heat olive oil in a skillet, add onions and salt, caramelize for about 15-20 minutes.
  3. Remove from heat, stir in thyme and cool slightly.
  4. Preheat oven to 400°F (200°C) and roll out puff pastry.

  6. Brush edges with beaten egg.
