Globe Artichokes

Instructions
- Prepare the artichokes by trimming the stems and removing tough outer leaves.
- Simmer artichokes in salted boiling water for 20 minutes until fork-tender.
- In a skillet, melt butter and sauté minced garlic until fragrant. Add breadcrumbs, cheese, parsley, lemon juice, salt, and pepper; mix well.
- Stuff the cooled artichokes with the prepared mixture.
- Preheat the oven to 375°F. Bake artichokes covered for 25 minutes, then uncovered for 10-15 minutes until golden brown.
Notes
For a dairy-free option, substitute butter with avocado oil and decrease cheese. To add more nutrition, consider mixing in finely chopped veggies in the stuffing.
