Description

Delicious globe artichokes stuffed with a buttery, flavorful filling perfect for gatherings or cozy evenings.


Ingredients

Globe Artichokes

Unsalted Butter (can substitute with olive oil)

Garlic, minced

Breadcrumbs (panko recommended)

Parmesan Cheese (or nutritional yeast for vegan)

Fresh Parsley (or basil)

Lemon Juice (lime juice as alternative)

Black Pepper and Salt


Instructions

  1. Prepare the artichokes by trimming the stems and removing tough outer leaves.
  2. Simmer artichokes in salted boiling water for 20 minutes until fork-tender.
  3. In a skillet, melt butter and sauté minced garlic until fragrant. Add breadcrumbs, cheese, parsley, lemon juice, salt, and pepper; mix well.
  4. Stuff the cooled artichokes with the prepared mixture.
  5. Preheat the oven to 375°F. Bake artichokes covered for 25 minutes, then uncovered for 10-15 minutes until golden brown.

Notes

For a dairy-free option, substitute butter with avocado oil and decrease cheese. To add more nutrition, consider mixing in finely chopped veggies in the stuffing.
