Ingredients

1 cup cottage cheese
1/2 cup unsweetened cocoa powder
1/2 cup sugar or sugar substitute
1/4 cup unsweetened applesauce
2 large eggs
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt

Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, blend the cottage cheese until smooth and creamy.
- In a medium bowl, whisk together cocoa powder, sugar, baking powder, and salt.
- In a separate bowl, beat together eggs, applesauce, and vanilla extract until smooth, then fold in blended cottage cheese.
- Gradually add dry mixture into wet mixture, stirring until just combined.
- Grease a 9×9-inch baking pan with non-stick spray or parchment paper.
- Pour the brownie batter into the prepared pan, spreading evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow brownies to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
