Description

Delightful and elegant Berry Cream Puffs filled with fresh cream and berries.

Ingredients

Puff Pastry

Fresh Berries (strawberries, blueberries, raspberries)

Heavy Cream

Powdered Sugar

Vanilla Extract

Lemon Zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out your puff pastry on a floured surface until it’s about 1/8 inch thick. Cut it into squares or circles, approximately 3 inches in size.
  3. Place the pastry pieces on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Allow them to cool on a wire rack.
  4. In a mixing bowl, whisk the heavy cream until soft peaks form. Add in powdered sugar and vanilla extract, and continue to whisk until stiff peaks are achieved.
  5. While the cream is being whipped, rinse your fresh berries and let them drain. Cut larger berries like strawberries into bite-sized pieces.
  6. Once cooled, carefully cut each puff pastry in half. Spoon or pipe the whipped cream into the bottom half and top with a generous amount of berries.
  7. Gently place the top half of the pastry back on. Dust with extra powdered sugar for a beautiful presentation.

Notes

For a healthier twist, use whole wheat pastry or substitute heavy cream with Greek yogurt.
