Discover a warm satisfying Beef Macaroni Soup in one bowlcozy hearty noodles with tender beef ready in minutes for busy weeknights Perfect pick

Ingredients

Scale

1 pound (450 g) ground beef or small cubed beef

8 oz (225 g) elbow macaroni or small shells

1 medium onion, diced

3 garlic cloves, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups (1.4 L) beef broth

1 can (14.5 oz / 410 g) crushed tomatoes

1 teaspoon dried oregano

1/2 teaspoon dried thyme

1 bay leaf

1 tablespoon olive oil

Salt to taste

Freshly ground black pepper to taste

Optional dairy finish: 1/4 cup milk or cream per serving

Instructions

  • Pat the beef dry and brown in a large heavy pot with olive oil in a single layer, browning in batches if needed. Season lightly with salt and pepper, then break up any clumps and sear until a rich crust forms. Optional: deglaze with a splash of broth or water to lift the fond.
  • In the same pot, sautĂ© the onion, carrot, and celery until softened, about 5–7 minutes. Add garlic and cook for another minute. Optional: add a pinch of crushed red pepper for subtle heat.
  • Return the beef to the pot, add crushed tomatoes and beef broth, then stir in oregano, thyme, and bay leaf. Bring to a light simmer and scrape up any remaining fond to incorporate flavor.
  • Reduce heat to low and simmer for 40–45 minutes, until beef is tender and flavors meld. If the liquid reduces too quickly, add a splash of broth to maintain a gentle simmer.
  • Cook the macaroni in a separate pot until al dente, then drain. If cooking in the soup, monitor liquid and add more broth as needed to prevent overcooking.
  • Stir in the cooked macaroni and simmer 5 minutes. Adjust seasoning with salt and pepper. For extra creaminess, whisk in milk or cream per serving or stir in a tablespoon of butter off the heat. Remove bay leaf.
  • Ladle into bowls and garnish with herbs or cheese. Serve with crusty bread or a side salad. Reheating tips: store leftovers in airtight containers for up to 3 days or freeze for longer storage.
