Description

Deliciously indulgent baked raspberry donuts that are lower in fat but full of flavor. Perfect for breakfast or as a sweet treat.


Ingredients

Scale

1 ½ cups all-purpose flour

¾ cup granulated sugar

2 tsp baking powder

¼ tsp salt

½ cup milk (or non-dairy milk)

1 egg (or flax egg)

1 tsp vanilla extract

1 cup fresh raspberries (or frozen)

¼ cup olive oil (or unsweetened applesauce)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a donut pan.
  3. In a bowl, sift together flour, sugar, baking powder, and salt.
  4. In another bowl, whisk together milk, egg, vanilla extract, and olive oil.
  5. Gently fold wet ingredients into dry ingredients until just combined.
  6. Fold in fresh raspberries.
  7. Fill each donut mold about two-thirds full.
  8. Bake for 12 to 15 minutes or until a toothpick comes out clean.
  9. Allow cooling in the pan for 5 minutes, then transfer to a wire rack.

Notes

Enjoy plain, dusted with powdered sugar, or glazed. Can be served warm with ice cream or paired with coffee for breakfast.
