Description

Ingredients

2 ripe pears (Bosc or Bartlett), peeled, cored, and chopped

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar

1/2 cup unsalted butter, softened

2 large eggs

2 teaspoons baking powder

1 teaspoon ground cardamom

1 teaspoon vanilla extract

1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch cake pan.
  2. Peel, core, and chop pears into small chunks, tossing with lemon juice.
  3. In a bowl, whisk together flour, baking powder, cardamom, and salt.
  4. In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add eggs one at a time, incorporating fully before adding the next, then mix in vanilla.
  6. Gradually combine dry ingredients with the wet mixture until just mixed, avoiding overmixing.
  7. Fold in the chopped pears.
  8. Pour into the prepared pan and bake for about 40 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
