Description

A flavorful Vietnamese dish featuring marinated chicken thighs infused with lemongrass, garlic, and shallots, cooked to perfection and served with fresh herbs.


Ingredients

  • Boneless, skinless chicken thighs
  • Lemongrass, finely chopped
  • Fresh garlic, minced
  • Shallots, sliced
  • Fish sauce
  • Brown sugar
  • Black pepper, cracked
  • Vegetable oil
  • Cilantro, for garnish

Instructions

  1. In a large bowl, combine chicken thighs, lemongrass, garlic, shallots, fish sauce, brown sugar, and black pepper. Mix well and marinate for at least 15 minutes.
  2. Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat.
  3. Add the marinated chicken in a single layer and cook for 5-7 minutes until golden brown, flipping halfway through.
  4. Pour the leftover marinade into the skillet, stir constantly, and let it simmer for 3-5 minutes until the sauce thickens.
  5. Remove from heat, garnish with cilantro, and serve with jasmine rice or rice noodles.

Notes

For a flavorful boost, marinate the chicken for up to an hour. Serve hot with your choice of rice or noodles.
