Ingredients
- Boneless, skinless chicken thighs
- Lemongrass, finely chopped
- Fresh garlic, minced
- Shallots, sliced
- Fish sauce
- Brown sugar
- Black pepper, cracked
- Vegetable oil
- Cilantro, for garnish
Instructions
- In a large bowl, combine chicken thighs, lemongrass, garlic, shallots, fish sauce, brown sugar, and black pepper. Mix well and marinate for at least 15 minutes.
- Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat.
- Add the marinated chicken in a single layer and cook for 5-7 minutes until golden brown, flipping halfway through.
- Pour the leftover marinade into the skillet, stir constantly, and let it simmer for 3-5 minutes until the sauce thickens.
- Remove from heat, garnish with cilantro, and serve with jasmine rice or rice noodles.
Notes
For a flavorful boost, marinate the chicken for up to an hour. Serve hot with your choice of rice or noodles.
