Delicious and health-conscious vegan cookies made with matcha, providing a unique flavor and sweetness without refined sugars.


Ingredients

1 ½ cups All-Purpose Flour

2 tablespoons Matcha Powder

½ cup Coconut Sugar

1 teaspoon Baking Soda

â…“ cup Coconut Oil (melted)

1 tablespoon Flaxseed Meal

2.5 tablespoons Water

½ cup Almond Milk

1 teaspoon Vanilla Extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the all-purpose flour, matcha powder, coconut sugar, and baking soda. Whisk to ensure the ingredients are well incorporated.
  3. In a small bowl, mix 1 tablespoon of flaxseed meal with 2.5 tablespoons of water and let it sit for about 5 minutes until gelatinous.
  4. Add the melted coconut oil, almond milk, vanilla extract, and prepared flax egg to the dry mixture. Stir until well combined.
  5. Drop spoonfuls of dough onto a lined baking sheet, leaving space for spreading.
  6. Bake for 10-12 minutes or until edges are golden. Allow to cool before transferring to a wire rack.

Notes

For a chocolate twist, substitute matcha with cocoa powder. Store in an airtight container for up to a week.
