Ingredients

2 tablespoons Matcha Powder
½ cup Coconut Sugar
1 teaspoon Baking Soda
â…“ cup Coconut Oil (melted)
1 tablespoon Flaxseed Meal
2.5 tablespoons Water
½ cup Almond Milk
1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the all-purpose flour, matcha powder, coconut sugar, and baking soda. Whisk to ensure the ingredients are well incorporated.
- In a small bowl, mix 1 tablespoon of flaxseed meal with 2.5 tablespoons of water and let it sit for about 5 minutes until gelatinous.
- Add the melted coconut oil, almond milk, vanilla extract, and prepared flax egg to the dry mixture. Stir until well combined.
- Drop spoonfuls of dough onto a lined baking sheet, leaving space for spreading.
- Bake for 10-12 minutes or until edges are golden. Allow to cool before transferring to a wire rack.
Notes
For a chocolate twist, substitute matcha with cocoa powder. Store in an airtight container for up to a week.
