Description

1 cup mashed potatoes


Instructions

  1. Prepare your mashed potatoes by boiling peeled potatoes until tender, then mash until smooth. Season lightly with salt and pepper.
  2. In a medium bowl, mix together 1 cup of cottage cheese with 1 cup of mashed potatoes until well incorporated.
  3. Scoop out portions of the mixture and roll them into small balls, then slightly flatten them to resemble a tot shape.
  4. Preheat your oven to 400°F (200°C).
  5. Line a baking sheet with parchment paper and place the formed tots on the sheet, spaced apart.
  6. Bake the cottage cheese tots for 20 minutes or until golden brown, flipping halfway through for extra crispiness.
