1 cup mashed potatoes
Instructions
- Prepare your mashed potatoes by boiling peeled potatoes until tender, then mash until smooth. Season lightly with salt and pepper.
- In a medium bowl, mix together 1 cup of cottage cheese with 1 cup of mashed potatoes until well incorporated.
- Scoop out portions of the mixture and roll them into small balls, then slightly flatten them to resemble a tot shape.
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and place the formed tots on the sheet, spaced apart.
- Bake the cottage cheese tots for 20 minutes or until golden brown, flipping halfway through for extra crispiness.
Notes
For a healthier option, consider using sweet potatoes instead of regular mashed potatoes. Ensure the mashed potatoes are gluten-free if needed.
