Description

Delicious homemade Strawberry Mini Pop Tarts with a flaky crust and gooey filling, perfect for breakfast or a sweet treat.

Ingredients

Scale

2 cups All-Purpose Flour

1/2 cup Unsalted Butter, cold and cubed

1/4 cup Granulated Sugar

1/4 tsp Salt

1/4 cup Ice Cold Water

1/2 cup Strawberry Jam or Preserves

1 cup Powdered Sugar

2 tbsp Milk

Instructions

  1. In a large mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice-cold water, mixing just until the dough comes together.
  3. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Roll out the dough to about 1/8 inch thickness on a lightly floured surface and cut into rectangles.
  5. Place half of the rectangles on a lined baking sheet. Spoon strawberry jam onto the center of each, leaving a border for sealing.
  6. Top with another rectangle of dough and press down the edges to seal. Crimp using a fork.
  7. Cut small slits in the tops of the pop tarts for steam to escape.
  8. Preheat oven to 350°F (175°C) and bake for 15-20 minutes until golden brown.
  9. Let cool on a wire rack. Whisk powdered sugar and milk to make icing, then drizzle over cooled pop tarts.

Notes

For richer taste, consider using whole wheat flour or substituting coconut oil for butter. Avoid overworking the dough for best results.
