1 package puff pastry
8 oz full-fat cream cheese
1 cup fresh strawberries, sliced
1/2 cup powdered sugar
1 tsp pure vanilla extract
1 large egg, beaten (for egg wash)
Zest of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon zest. Beat until smooth and creamy.
- Slice the fresh strawberries and set them aside.
- On a lightly floured surface, roll out your puff pastry to about a quarter-inch thickness.
- Cut the puff pastry into rectangles, about 4×6 inches.
- Place a generous tablespoon of the cream cheese mixture in the center of each rectangle, followed by a few slices of strawberries. Fold the corners of the pastry towards the center and pinch to seal.
- Brush the tops of the assembled Danishes with the beaten egg.
- Bake for 20-25 minutes or until golden and puffed.
- Remove from the oven and let cool for a few minutes. Serve warm, optionally dusted with powdered sugar.
Notes
Serve with coffee or tea for a delightful breakfast or snack. Store in an airtight container at room temperature for up to two days.
