8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup granulated sugar
1 tsp vanilla extract
1 cup strawberries, chopped
1 cup graham cracker crumbs
1/4 cup unsalted butter, melted
1/4 cup powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter; press into mini muffin tin.
- Bake for 5-7 minutes until golden, then cool.
- Beat cream cheese until smooth, then add granulated sugar, sour cream, and vanilla.
- Fold in strawberries carefully.
- Fill cooled crusts with cheesecake mixture.
- Chill for at least 2 hours before serving.
- Dust with powdered sugar and enjoy!
