Ingredients
1 cup unsalted butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup fresh strawberries, chopped
1/2 cup cream cheese, softened
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add to the wet mixture while mixing on low speed.
- Gently fold in chopped strawberries and softened cream cheese.
- Drop dough balls onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 10 to 12 minutes or until edges are lightly golden.
- Let the cookies cool on the baking sheet before transferring to a wire rack.
Notes
Store cookies in an airtight container for up to 5 days. For longer storage, freeze them for up to 3 months. Include a slice of bread in the container to keep them soft.
