Description
Deliciously transformed carrots with garlic and Parmesan, making for a flavorful and nutritious side dish.
Ingredients
- Fresh carrots (medium to large)
- Fresh garlic (minced)
- Fresh grated Parmesan cheese
- Extra virgin olive oil
- Salt
- Black pepper
- Fresh herbs (parsley or thyme, optional)
Instructions
- Wash and peel (if desired) the carrots, cutting them into equal-sized pieces for even cooking.
- Boil the carrots until fork-tender (15-20 minutes), then drain and cool slightly. Smash each carrot piece with a heavy glass or mallet.
- In a large bowl, combine smashed carrots with olive oil, minced garlic, salt, and pepper. Toss to coat.
- Add freshly grated Parmesan cheese, tossing gently to combine.
- Preheat the oven to 400°F (200°C) and arrange the carrots on a lined baking sheet. Roast for 15-20 minutes until golden brown and crispy.
- Garnish with additional Parmesan and fresh herbs if desired. Serve warm.
Notes
For a lighter version, use reduced-fat cheese. Can also substitute olive oil with canola oil for a different flavor.
