Description

A delicious and impressive dish featuring tender Cornish hens roasted to perfection, ideal for family gatherings.


Ingredients

  • Cornish Hens (1-2 pounds each)
  • Olive Oil
  • Garlic (fresh)
  • Fresh Herbs (Rosemary, Thyme)
  • Lemon
  • Salt
  • Pepper
  • Vegetables (Carrots, Onions, Potatoes)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the Cornish hens under cold water, pat dry, and remove any innards.
  3. Mix olive oil, minced garlic, chopped herbs, salt, and pepper, then rub this mixture all over the hens.
  4. Cut the lemon into quarters and place them inside the cavity of each hen.
  5. Slice vegetables and spread them in a roasting pan.
  6. Place the hens breast-side up on the vegetables and roast for 50-60 minutes until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and allow to rest for 10-15 minutes before carving.

Notes

Serve with creamy mashed potatoes or wild rice for a complete meal; allow the hens to rest for optimal juiciness.
