Ingredients
- Cornish Hens (1-2 pounds each)
- Olive Oil
- Garlic (fresh)
- Fresh Herbs (Rosemary, Thyme)
- Lemon
- Salt
- Pepper
- Vegetables (Carrots, Onions, Potatoes)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the Cornish hens under cold water, pat dry, and remove any innards.
- Mix olive oil, minced garlic, chopped herbs, salt, and pepper, then rub this mixture all over the hens.
- Cut the lemon into quarters and place them inside the cavity of each hen.
- Slice vegetables and spread them in a roasting pan.
- Place the hens breast-side up on the vegetables and roast for 50-60 minutes until the internal temperature reaches 165°F (74°C).
- Remove from the oven and allow to rest for 10-15 minutes before carving.
Notes
Serve with creamy mashed potatoes or wild rice for a complete meal; allow the hens to rest for optimal juiciness.
