Fresh Raspberries (2 cups)
Cream Cheese (8 oz)
Granulated Sugar (1 cup)
Flour (1 cup)
Butter (½ cup)
Eggs (2 large)
Vanilla Extract (1 teaspoon)
Powdered Sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal later.
- In a mixing bowl, combine melted butter, granulated sugar, and flour. Stir until the mixture resembles coarse crumbs. Press it firmly into the bottom of the prepared baking dish to form a base.
- Place the crust in the preheated oven and bake for about 15 minutes or until lightly golden.
- In a separate bowl, beat cream cheese with sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Finish with the vanilla extract.
- After the crust has cooled slightly, distribute the raspberries evenly over the crust. Pour the cream cheese mixture over the top.
- Return the baking dish to the oven and bake for an additional 20-25 minutes.
- Let the dish cool at room temperature. Refrigerate for a few hours or overnight for best results. Cut into squares and dust with powdered sugar before serving.
Notes
For a gluten-free version, substitute almond flour for all-purpose flour. Consider Greek yogurt as a healthier alternative to cream cheese.
