Ingredients

Fresh Raspberries (2 cups)

Cream Cheese (8 oz)

Granulated Sugar (1 cup)

Flour (1 cup)

Butter (½ cup)

Eggs (2 large)

Vanilla Extract (1 teaspoon)

Powdered Sugar (for dusting, optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal later.
  2. In a mixing bowl, combine melted butter, granulated sugar, and flour. Stir until the mixture resembles coarse crumbs. Press it firmly into the bottom of the prepared baking dish to form a base.
  3. Place the crust in the preheated oven and bake for about 15 minutes or until lightly golden.
  4. In a separate bowl, beat cream cheese with sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Finish with the vanilla extract.
  5. After the crust has cooled slightly, distribute the raspberries evenly over the crust. Pour the cream cheese mixture over the top.
  6. Return the baking dish to the oven and bake for an additional 20-25 minutes.
  7. Let the dish cool at room temperature. Refrigerate for a few hours or overnight for best results. Cut into squares and dust with powdered sugar before serving.

For a gluten-free version, substitute almond flour for all-purpose flour. Consider Greek yogurt as a healthier alternative to cream cheese.
