Description

A vibrant and nutritious dish that combines Brussels sprouts with pomegranate for a delicious and healthy side.


Ingredients

  • 1 lb Brussels sprouts, halved
  • 1 cup pomegranate seeds
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1 tbsp honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse Brussels sprouts and remove damaged leaves.
  2. Toss halved Brussels sprouts in a bowl with olive oil, salt, and pepper until well coated.
  3. Spread Brussels sprouts on a baking sheet and roast for 20 minutes, flipping halfway through.
  4. Remove from oven and sprinkle with pomegranate seeds and honey (if using).
  5. Drizzle with balsamic vinegar, toss well, and let sit for 5 minutes before serving.

Notes

Great as a side dish or served over mixed greens with nuts for a fuller meal.
