- 1/2 cup Unsalted Butter
- 2 Large Eggs
- 2 cups All-Purpose Flour
- 3.4 oz Pistachio Pudding Mix
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup Chopped Pistachios
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with butter or line it with parchment paper.
- In a large mixing bowl, combine flour, baking powder, and salt; whisk together.
- In another bowl, beat together sugar and softened butter until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in the pistachio pudding mix.
- Gradually add the dry ingredients to the wet mixture, stirring just until blended.
- Fold in chopped pistachios.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for 25-30 minutes or until the edges are golden and a toothpick comes out clean.
- Allow to cool for at least 10 minutes before transferring to a wire rack and cutting into squares.
Notes
For a dairy-free option, substitute butter with coconut oil and use flax eggs instead of regular eggs.
