Ingredients

  • 1 cup Sugar
  • 1/2 cup Unsalted Butter
  • 2 Large Eggs
  • 2 cups All-Purpose Flour
  • 3.4 oz Pistachio Pudding Mix
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Chopped Pistachios

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish with butter or line it with parchment paper.
  3. In a large mixing bowl, combine flour, baking powder, and salt; whisk together.
  4. In another bowl, beat together sugar and softened butter until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition, then stir in the pistachio pudding mix.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until blended.
  7. Fold in chopped pistachios.
  8. Pour the batter into the prepared baking dish, spreading it evenly.
  9. Bake for 25-30 minutes or until the edges are golden and a toothpick comes out clean.
  10. Allow to cool for at least 10 minutes before transferring to a wire rack and cutting into squares.

Notes

For a dairy-free option, substitute butter with coconut oil and use flax eggs instead of regular eggs.
