- 2 eggs (or flax eggs for vegan option)
- 1 cup milk (or almond, soy, or oat milk for dairy-free)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons butter
- 1/2 cup pistachios, chopped
- Maple syrup, for drizzling
Instructions
- In a medium bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until fully combined.
- Cut your chosen bread into thick sticks, approximately 1 to 2 inches wide.
- In a large non-stick pan, melt butter over medium heat.
- Dunk the bread sticks into the egg mixture, allowing excess to drip off, and place them on the hot pan, cooking for 2-3 minutes on each side until golden brown.
- Sprinkle chopped pistachios over the sticks during the last minute of cooking.
- Serve warm, drizzled with maple syrup and additional chopped pistachios.
