  • 2 eggs (or flax eggs for vegan option)
  • 1 cup milk (or almond, soy, or oat milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 1/2 cup pistachios, chopped
  • Maple syrup, for drizzling

Instructions

  1. In a medium bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until fully combined.
  2. Cut your chosen bread into thick sticks, approximately 1 to 2 inches wide.
  3. In a large non-stick pan, melt butter over medium heat.
  4. Dunk the bread sticks into the egg mixture, allowing excess to drip off, and place them on the hot pan, cooking for 2-3 minutes on each side until golden brown.
  5. Sprinkle chopped pistachios over the sticks during the last minute of cooking.
