Description

Delightful and visually stunning Pineapple Christmas Balls that elevate your holiday celebrations with a burst of tropical flavor.

Ingredients

Scale
  • 1 Fresh Pineapple, cut into chunks
  • 8 oz Cream Cheese (or Greek Yogurt for a lighter option)
  • 1/2 cup Powdered Sugar (or honey/maple syrup)
  • 1/2 cup Chopped Nuts (Walnuts or Pecans, or seeds for nut allergies)
  • 1/2 cup Shredded Coconut (unsweetened preferred)
  • 1/2 cup Mini Chocolate Chips (or dark chocolate chips)
  • Optional Sprinkles for decoration

Instructions

  1. Prepare the Pineapple: Cut the fresh pineapple into small chunks, removing the tough core.
  2. Mix the Base: In a mixing bowl, combine pineapple chunks, cream cheese, and powdered sugar, blending until smooth and creamy.
  3. Add Flavor and Textures: Fold in chopped nuts and shredded coconut until evenly distributed.
  4. Form the Balls: Scoop a tablespoon of the mixture and roll it into a golf ball-sized ball, placing each on a parchment-lined baking sheet.
  5. Coat with Chocolate Chips: Sprinkle or roll the balls in mini chocolate chips.
  6. Chill and Set: Cover and chill in the fridge for at least 30 minutes.
  7. Serve and Enjoy: Arrange on a festive platter, adding optional sprinkles before serving.
