Ingredients

2 lbs parsnips, peeled and cut into sticks
3 tbsp olive oil
2 tbsp maple syrup
1 tsp fresh thyme (or 0.5 tsp dried thyme)
Salt to taste
Pepper to taste
1 tbsp balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the parsnips, then cut them into even-sized sticks (about 1 inch long).
- In a large bowl, combine parsnips with olive oil, maple syrup, salt, and pepper. Toss until coated.
- Spread the parsnips on a baking sheet in a single layer and roast for 20-25 minutes until golden and crisp.
- Remove from the oven and sprinkle with fresh thyme, drizzle with balsamic vinegar, and toss gently. Return to the oven for an additional 5 minutes.
- Allow to cool slightly before serving. Enjoy warm as a side or main dish.
Notes
For a vegan alternative, substitute maple syrup with agave nectar. To maintain crispiness, reheat in the oven.
