Bone-in Lamb Chops
2 tablespoons Dijon Mustard
1 tablespoon Fresh Thyme
2 cloves Garlic, minced
2 tablespoons Olive Oil

Instructions
- Remove lamb chops from the refrigerator and let sit at room temperature for 15 minutes. Preheat oven to 400°F (200°C).
- Season both sides of the lamb chops generously with salt and freshly cracked black pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear lamb chops for 3-4 minutes on each side until golden brown.
- Push chops to one side, add minced garlic, Dijon mustard, and thyme on the other, cook for 1 minute.
- Pour in chicken broth, scraping up brown bits, and bring to a simmer.
- Transfer skillet to preheated oven and roast for 5-7 minutes until lamb reaches 145°F (medium-rare).
- Remove from oven, add butter to sauce if desired, and stir until melted.
- Serve lamb chops on a plate drizzled with mustard thyme sauce.
Notes
For a milder mustard flavor, consider yellow or grainy mustard. Pair with seasonal vegetables or couscous.
