Ingredients

4 skinless, boneless chicken breasts

1/2 cup hot honey

1/2 cup crumbled feta cheese

2 tablespoons extra virgin olive oil

3 cloves garlic, minced

Fresh herbs (rosemary, thyme, or oregano)

Juice of 1 lemon

Salt and pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. In a bowl, combine hot honey, minced garlic, and olive oil; whisk until blended.
  4. Coat the chicken breasts with the honey mixture and transfer to a greased baking dish.
  5. Sprinkle crumbled feta cheese over the chicken, pressing lightly.
  6. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the feta is golden.
  7. Drizzle with fresh lemon juice and sprinkle chopped herbs on top before serving.
  8. Let rest for a few minutes, then slice and serve.

Notes

For a juicier option, chicken thighs can be used. Store leftovers in an airtight container for up to three days.
