Description

Delicious honey roasted carrots that transform vegetables into a flavorful side dish with a touch of sweetness and caramelization.


Ingredients

2 lbs Fresh Carrots

1/4 cup Honey (or Maple Syrup for vegan option)

2 tbsp Olive Oil (or Ghee/Avocado Oil)

1/2 tsp Salt

1/4 tsp Black Pepper

1 tbsp Fresh Thyme (optional)


Instructions

  1. Preheat the Oven to 425°F (220°C).
  2. Wash and peel the carrots; cut into sticks or rounds for even cooking.
  3. In a bowl, mix carrots with olive oil, honey, salt, and black pepper until well coated.
  4. Spread the mixture on a baking sheet lined with parchment paper in a single layer.
  5. Roast for 25-30 minutes until tender and caramelized, shaking the pan halfway through.
  6. Remove from the oven, cool slightly, and serve warm garnished with fresh herbs if desired.

Notes

For a unique twist, mix in Brussels sprouts or sweet potatoes.
