2 tbsp Olive Oil (or Ghee/Avocado Oil)

1/4 tsp Black Pepper
1 tbsp Fresh Thyme (optional)
Instructions
- Preheat the Oven to 425°F (220°C).
- Wash and peel the carrots; cut into sticks or rounds for even cooking.
- In a bowl, mix carrots with olive oil, honey, salt, and black pepper until well coated.
- Spread the mixture on a baking sheet lined with parchment paper in a single layer.
- Roast for 25-30 minutes until tender and caramelized, shaking the pan halfway through.
- Remove from the oven, cool slightly, and serve warm garnished with fresh herbs if desired.
